PURPOSE: A method for enhancing the yield of high quality red ginseng by optimization of heat treatment conditions is provided, thereby reducing quality degrading factors such as generation of crack, inner pore or inner wall in the red ginseng. CONSTITUTION: The method for enhancing the yield of high quality red ginseng by optimization of heat treatment conditions comprises the steps of: heating fresh ginseng by increasing the temperature from room temperature to 50 deg. C for 5 minutes, maintaining 50 deg. C for 15 minutes, increasing the temperature from 50 deg. C to 87 deg. C for 20 minutes, increasing the temperature from 87 deg. C to 96 deg. C for 35 minutes, and slowly increasing the temperature from 96 deg. C to 97 deg. C for 15 minutes; steaming the heated ginseng; and cooling and drying the steamed ginseng with far infrared rays or microwave.
