The method involves controlling the cooking process depending on the output signal of a cooking process sensor (20) inserted at least temporarily into a food item (1) being cooked and applying heat and/or pressure and/or traction during the cooking process to force a relative movement between the sensor and the food item to increase the penetration depth of the sensor into the food item depending on the state of heating of the food item.
