Meat quality and quantity evaluation assembly has digital camera linked to computer with reference data

A meat quality assessment assembly has a digital camera linked to a computer. The system has a meat conveyer (1), a digital camera (2), an image evaluation system (3), a comparative data bank with standard values (4), a process control unit (5), and a data presentation system (6). The data is made available for use in a subsequent process (7). The components (1-7) are coupled to provide an objective qualitative and quantitative assessment of the meat product using color pictures taken on-line and compared reference images in the data bank. The data bank contains information on the comparative presence of muscle, fat, tendons as established in previous laboratory tests. The values are calibrated with known temperature variations between -20C and + 20C. The reference images and data are stored for different species of animal.
