Recombinant triacylglycerol (TAG) lipase (I) of Arabidopsis thaliana, and its derivatives and/or variants, are new. Recombinant triacylglycerol (TAG) lipase (I) of Arabidopsis thaliana, and its derivatives and/or variants, are new. (I) has a sequence (2) of 393 amino acids (aa), where the first 21 aa represent a signal peptide, and the mature protein has a 372 aa sequence (4). The variants/fragments may have one or more aa substitutions provided that they retain: (i) at least 70% identity or 80% similarity with (I); and (ii) have the same enzymatic activity as (2), especially ability to hydrolyze oils such as long-chain TAG, specifically triolein. Independent claims are also included for: (1) nucleic acid sequence (II) that encodes (I) or its fragments or variants; (2) recombinant nucleic acid (IIa) that comprises (II) and elements required for transcription, particularly promoter and terminator; (3) vectors e.g. plasmids or baculovirus, that contains (IIa); (4) host cells transformed by the vector of (3); (5) preparation of (I), or its fragments or variants, by culturing cells of (4); (6) antisense nucleic acids (IIb) that are complementary to (II); (7) vector e.g. plasmid or Agrobacterium tumefaciens that contains (IIb); (8) transgenic plant cells, plant parts or plants transformed with (II), (IIa) or (IIb); (9) transgenic seeds transformed with (II), (IIa) or (IIb), produced by crossing plants of (8), and the plants produced by growing them; (10) methods for producing transgenic plants of (8); (11) nutritional supplement or pharmaceutical composition that contains (I), or its fragments or variants; and (12) mono- or poly-clonal antibodies (Ab) directed against (I), or its derivatives and fragments.
