PPROBLEM TO BE SOLVED: To provide a method for producing Koji (malted rice) comprising powdery Koji, using corms or cereals conventionally seeming to be hard to produce Koji as a raw material so as to efficiently culture the Koji under optimum conditions; and to provide food and drink using the powdery koji. PSOLUTION: The method for producing Koji comprising powdery Koji comprises the following process: adding a predetermined amount of water to powder comprising corm powder or cereal powder, or powder of a mixture comprising the corm powder and the cereal powder; homogeneously mixing the powder with the water using a mechanical mixer to prepare hydrolytic powder where the powder and the water are homogeneously dispersed; subjecting the hydrated powder to pregelatinization via steam heating or direct heating followed by inoculating Aspergillus oryzae into the pregelatinized powder to culture the Aspergillus oryzae so as to produce powdery Koji.
