PROBLEM TO BE SOLVED: To provide roasted coffee beans each having useful component to a human body through improving a roasting method of coffee beans to prevent the decomposition of trigonelline which is known to have dementia ameliorating and preventing effect.;SOLUTION: A method for producing the roasted coffee beans suppressed in the decomposition of trigonelline comprises roasting coffee beans at 100-250°C roasting temperature in a roasting machine and controlling a roasting cumulative temperature to not more than 3,250°C.
