PPROBLEM TO BE SOLVED: To provide a method for improving flesh color of salmon for bringing the color of ordinary muscle of cultured salmon to a red orange color similar to that of natural salmon and making the color hard to fade. PSOLUTION: This method for improving flesh color of salmon comprises letting salmon ingest capsicum and/or capsicum component, and astaxanthin if necessary. A salmon flesh color improving composition, in detail, a flesh color improver for salmon or feed for salmon, contains as the effective component capsicum and/or capsicum component, and astaxanthin if necessary. The components are contained as effective components to reinforce accumulation of astaxanthin as red orange color pigment of ordinary muscle of salmon which ingests the components and further strengthen the red orange color.
