PROBLEM TO BE SOLVED: To provide a method for increasing an isoflavone aglycone by detaching a glucose from an aglycone glycoside contained in soybeans without causing thermal denaturation, etc.;SOLUTION: This method for increasing the isoflavone aglycone in the soybeans comprises immersing the soybeans in water containing an organic acid (at least one selected from acetic acid, citric acid, lactic acid, and gluconic acid) in a concentration of 0.1-2 %(W/V) (preferably, 0.1-1%) at a temperature of 20-40°C (preferably, about 30°C), so that the soybeans containing the isoflavone aglycone in a high concentration are effectively produced. The method has such a feature that the soybeans are treated in a low concentration of the organic acid under a low temperature condition, and the glucose is detached from the aglycone glycoside in a state of the soybeans as they are, without breaking down the soybeans, nor adding a sour taste to the soybeans, nor causing the thermal denaturation, so that the isoflavone aglycone is extremely efficiently increased in the soybeans by the method.;COPYRIGHT: (C)2005,JPO&NCIPI
