PPROBLEM TO BE SOLVED: To obtain a new gene encoding an exo- and endo-β-1,3-glucanase, to obtain a microorganism enhanced in expression of the gene, and to decrease a molecular weight of β-1,3-glucan by using a specified protein. PSOLUTION: This exo- and endo-β-1,3-glucanase encoding gene derived from Aspergillus oryzae, a recombinant vector containing the gene, a microorganism transformed by the vector (transformant), a method for decreasing the molecular weight of the β-1,3-glucan by acting the microorganism, a cultured product of the same, and/or the specified protein on the glucan, and a food containing the same are provided, respectively.
