PROBLEM TO BE SOLVED: To obtain a new neutral xylanase capable of specifically hydrolyzing various xylanes and xylooligosaccharides comprising xylotetraose or above and providing low molecular weight xylooligosaccharide for functional food raw materials from a microorganism of the genus Acremonium. ;SOLUTION: This neutral xylanase specifically acts on various xylanes and xylooligosaccharides comprising xylotetraose or above and the b-xyloside bond is cleaved by end type mechanism to produce xyloologosaccharide having low molecular weight, mainly comprising xylose, xylobiose and xylotriose. Optimum pH is about 7.0 and stable pH is 6.0-10.0 when the xylanase is treated at 37°C for 15min and optimum temperature is 50°C and the xylanase is stable until 40°C when it is treated at pH7.0 for 20min and the xylanase has about 15% residual activity even at 80°C and has about 22500 molecular weight (SDS electrophoretic method) and about 4.7 isoelectric point.
