PROBLEM TO BE SOLVED: To obtain the subject composition excellent in solubility in water and digestion and absorption, useful as a food material, a cosmetic material, etc., by treating a de-fatted material of sesame seed with an enzyme. SOLUTION: A de-fatted material of a sesame seed obtained by de-fatting a raw sesame seed with n-hexane, etc., is treated with an enzyme to give a protein composition comprising (A) 40-95wt.% of a crude protein having molecular weights in a wide range in which the proteins are partially made into peptides, (B) 1-50wt.% of a glucide, (C) 0-5wt.% of a lipid, (D) 0-1wt.% of a fibrous material, (E) 0.2-3wt.% of a physiologically active substance derived from a sesame seed (lignan glycoside, glycoside, etc.). When 5wt.% of the composition is suspended in pure water at a room temperature at pH7, =80wt.% of the composition is dissolved and can impart an excellent flavor and moisture retaining effect.
