The invention relates to a method of obtaining a sesame protein isolate by means of solubilisation, ultrafiltration and precipitation, which begins with an oil extraction step followed by a grinding step. The resulting flour is solubilised using NaCl 0.1-5 M, at pH values of 8-11 or 2-4. The solubilised product is subjected to ultrafiltration using a semi-permeable membrane with an exclusion limit of 70-360 Kdal and the filtrate is passed continuously through an activated carbon filter in order to trap bitter taste-causing molecules. Finally, the proteins are precipitated by reducing the pH to values of 4.5-7.5 and said precipitation step can be accelerated by means of centrifugation at 1000-20000 rpm. The resulting product is dried until a moisture level of less than 20 % is obtained. The inventive protein isolate has emulsifying, gelling and thickening properties and can be used in food production or as a food supplement.
