PURPOSE: A method and apparatus for making bean dregs oil by biodegradation of bean dregs as a by-product from tofu processing using degrading enzymes are provided. They discharge little or no waste solids, maintain nutrients of beans and have relatively low energy consumption. CONSTITUTION: Solids of bean dregs are biodegraded with degrading enzymes and then ground to give a degradation product with a reduced particle size. The above procedures are repeated one or more times at 45 to 60deg.C to give a final product having a particle size of 0.1 to 60 micrometers. The degrading enzymes are selected from the group consisting of cellulase, hemi-cellulase, pectinase, proteinase or their mixture in a weight ratio of 100:10 to 25:75 to 90:2 to 5.
