摘要

PURPOSE: A process for preparing aldose having n-1 carbons is provided, thereby preparing aldose having improved stability in higher yield at reduced cost by continuously inhibiting over reaction of a target product. CONSTITUTION: The process for preparing aldose having n-1 carbons from aldonic acid having n carbon atoms with hypochlorous acid or hypochlorite comprises adding a compound having reactivity with the hypochlorous acid or hypochlorite higher than that of aldose produced into a reaction mixture, wherein the compound having reactivity with the hypochlorous acid or hypochlorite higher than that of aldose produced is at least one selected from a reducing agent, aldehyde and carboxylic acid; the reducing agent is alkali metal salts of sulfite or dithionite, aliphatic aldehydes having 1 to 4 carbon atoms or aromatic aldehydes, or aliphatic carboxylic acids having 1 to 4 carbon atoms or aromatic carboxylic acids; the aliphatic aldehyde is formaldehyde or acetaldehyde; and the carboxylic acid is formic acid or acetic acid.
