PURPOSE: Stinkless and disposable raw chungkookjang(fermented soybeans) is provided, thereby rapidly and easily producing the chungkookjang, removing stink therefrom, and preserving the distinct taste thereof. Therefore, the user can easily take nutrition of raw chungkookjang. CONSTITUTION: The stinkless and disposable raw chungkookjang comprises (a) 100 to 1000 parts by weight of vacuum packed soybeans which are prepared by washing, water dipping and steaming soybeans; (b) 1 to 10 parts by weight of a freeze-dried stock microorganism for chungkookjang which has improved polygamma-glutamic acid producing activity and is Bacillus sp.; and (c) a mineral stick containing cation minerals which is sprayed on the raw chungkookjang, wherein the microorganism is selected from Bacillus subtilis var. chungkookjang(KCTC 0697BP) and Bacillus subtilis; and the cation mineral is at least one selected from calcium, magnesium, iron, zinc and manganese.
