PURPOSE: A manufacturing method of unrefined rice wine is provided, thereby sufficiently extracting the useful medicinal components from medicinal herbs into the wine, so that the wine has health-improving activity for preventing various diseases and improved taste and flavor. CONSTITUTION: The manufacturing method of unrefined rice wine comprises the steps of: inoculating fungi into the steamed starch materials and culturing them to prepare koji; saccharifying the starch materials using the koji, adding yeast into the materials and fermenting the mixture to prepare crude liquor; adding water and koji into the crude liquor and stirring the mixture; adding water and steamed rice into the mixture, and stirring the mixture; and fermenting the mixture and filtering the fermented mixture with a sieve, wherein the water is a medicinal herb extracted water; and the medicinal herb extracted water is prepared by mixing 78 to 82 wt.% of Gleditsia sinensis LAM., 6 to 7 wt.% of Eucommia ulmoides OLIV., 6 to 7 wt.% of Achyranthes bidentata BL. And 6 to 7 wt.% of Acanthopanacis Cortex, adding water into the medicinal herb mixture, slightly heating the mixture for 9 to 11 hours, and filtering the heated mixture with a fine sieve.
