PURPOSE: A method of making sweet potato ice cream by freezing a mixture of sweet potato powder, milk and oligosaccharide and then grinding is provided. The product has a sweet taste and a clean aftertaste and is useful as a health food. CONSTITUTION: A mixture of 45% by weight of sweet potato powder, 45% by weight of milk and 10% by weight of oligosaccharide is frozen slowly and ground with a grinder to give sweet potato ice cream.
