DHA CHOCOLATE COMPOSITION CONTAINING PURIFIED FISH OIL, DHA FATTY ACID, DHA ETHYLESTER AND SYNTHETIC GLYCERIDE AS DHA SOURCE, AND ANTIOXIDANT TO REDUCE OFF-TASTE AND OFF-FLAVOR

PURPOSE: A DHA chocolate composition containing above 5% by weight of DHA from a DHA source containing purified fish oil, DHA fatty acid, DHA ethyl ester, synthetic glyceride, and an antioxidant is provided. The composition does not deteriorate for a relatively long period of time regardless of using fish oil which is susceptible to oxidation and is remarkably reduced in off-taste and off-flavor. CONSTITUTION: The DHA chocolate composition consists of: 5% or more by weight of DHA containing purified fish oil, DHA fatty acid, DHA ethylester, synthetic glyceride, and an antioxidant as a DHA source; at least one antioxidant selected from the group consisting of tocopherol, green tea extract, ascorbic acid, sesamol and a mixture thereof, at least one selected from cocoa powder and chocolate syrup and whole milk powder. The composition additionally contains: chocolate flavor, vanilla flavor or milk flavor as a flavoring; sugar, xylitol or aspartame as a sweetener, lecithin or glycerine fatty acid as an emulsifier.
