PURPOSE: Provided is a preservation method of a sweet potato by freeze-drying. Therefore, the sweet potato, which has weak resistance to the low temperature and pathogens, is preserved for a long period of time inhibiting nutrition deterioration. CONSTITUTION: The preservation method of a sweet potato comprises the steps of: packing a sweet potato in a vinyl or synthetic resin pack and quick-freezing it in a freezer using the refrigerant cycle, maintaining the temperature to -10 to -18 deg.C; and preserving the frozen sweet potato maintaining the temperature to -10 to -18 deg.C.
