PURPOSE: A method for measuring the offensive smell in soybean oil is provided, thereby preserving constant quality of soybean oil and rapidly controlling it. Therefore, soybean oil having an improved taste and flavor can be supplied. CONSTITUTION: A method for measuring the offensive smell in soybean oil comprises measuring the content of acetic acid in soybean oil by using gas chromatography. In particular, the acetic acid content is measured by collecting volatile materials according to purge and trap method, head space method or simultaneous distillation extraction method.
