PURPOSE: A method for manufacturing fried unripe red pepper by coating unripe red pepper with wheat flour dough and then frying in oil is provided. The product is suitable as a between-meal snack and has a good taste and flavor. CONSTITUTION: Green pepper is soaked in brine containing 2 to % by weight of vinegar at 8 to 10deg.C for 40 days, washed with water and dehydrated. Then, the dehydrated red pepper is divided in half, coated with wheat flour dough and then fried in oil two times. The wheat flour dough contains wheat flour, frying powder, adlay powder and the like.
