FIELD: fat and oil industry, food technology.;SUBSTANCE: invention relates to removing free fatty acids from fats and oils. Method involves extraction of free fatty acids with mixture of basic organic nitrogen compounds with water that is used as extraction medium at temperature below boiling point of basic organic nitrogen compounds. The content of basic organic nitrogen compounds in mixture is 20 wt.-%, not less, but not above 60 wt.-%. The boiling point of using basic organic nitrogen compound is equal of the water boiling point or exceeds its but lower of the boiling point of fatty acids to be removed. In removing free fatty acids from vapor distillates of fats and oils after extraction with mixture of basic organic nitrogen compounds and water from 1 to 4 parts of alkane and/or ether are added to 1 part of liquid homogenous mixture obtained from the previous extraction step. Invention provides the development of the improved method for deoxidation of oils and fats of biological origin that provides, in first, to process raw with the high content of free fatty acids without solution of significant problems in constructing plant equipments and, in second, gives possibility for producing fats and oils of rather high quality.;EFFECT: improved removing method.;18 cl, 1 dwg, 10 ex
