Measurement device for determining the state of cooking oil or fat, in particular for measuring its polar fraction by measuring the dielectric constant. The device is configured so that a fictitious polar fraction can be assigned to a test oil that has no polar content and a known dielectric constant. During subsequent testing of the device it can be tested for calibration drift by determining if the assigned fictitious polar fraction has changed by more than a threshold amount. The invention also relates to a corresponding set with an inventive measurement device and at least one type of named test oil.
