The apparatus has a frame (1) with a cutting table (3) delimiting a longitudinal slit traversed by a cutting blade. The blade is mounted to a carrier (5) guided above the slit and operated by a handle (13). A waste material collecting and storing unit collects and stores waste materials that are produced as a result of slicing of the materials on the slab, by gravity of fall.
