PPROBLEM TO BE SOLVED: To provide a method of evaluating quantitatively damage of fresh vegetables and fruits after freezing. PSOLUTION: The present invention provides a method of evaluating quantitatively the damage of the fresh vegetables and fruits after freezing, by measuring by NMR (Nuclear Magnetic Resonance) a moisture diffusion coefficient of a texture cut piece, as to whether moisture permeability of the fresh vegetables and fruits is actually changed by freezing and thawing thereof or not, and by calculating a diffusion coefficient D of water in a texture/water diffusion coefficient Dw with respect to a diffusion time, and a method of the frozen damage of the fresh vegetables and fruits, by comparing the moisture permeability of the fresh vegetables and fruits after frozen with the moisture permeability of the fresh vegetables and fruits calculated using a cell diameter (diffusible space distance) obtained by optical microscope and the diffusion coefficient of water measured by the NMR.
