PROBLEM TO BE SOLVED: To provide a pretreatment method for the freeze storage of a perishable food, even fish-and-shellfish susceptible to deterioration, enabling its long- term storage through effectively preventing it from deterioration using ozone while maintaining the water regain thereof.;SOLUTION: This pretreatment method comprises the step (3) of freezing the perishable food (1) to a temperature below the freezing point of ozonic water and the step (4) of soaking the thus frozen perishable food (1a) in the ozonic water to form an ozonic ice coating layer on the food; wherein, optionally, prior to the step (3), the perishable food (1) is washed with either ozonic water or alkaline water generated on the cathode side of an electrolytic ozonic water production unit.;COPYRIGHT: (C)2003,JPO
