PROBLEM TO BE SOLVED: To obtain a giant corn excellent in palatability and flavor and having a soft teeth touch without using a specific device such as a freezing device and a vacuum frying device by removing the surface skin of the giant corn, cooking with a steam, immersing the cooked corn in a prescribed acid solution, etc., and then frying. ;SOLUTION: This method for obtaining a giant corn having a soft teeth touch, is provided by removing the surface skin of the giant corn, cooking with a steam, immersing the cooked corn in an acid solution of an organic acid such as a lactic acid, an inorganic acid such as hydrochloric acid or ≥40% (w/w) alcohol solution such as ethyl alcohol, then frying under a normal pressure, and preferably treating with a microwave.;COPYRIGHT: (C)1999,JPO
