Method for the early ripening of kiwi fruits. Early ripening involves changes in temperature, the use of ethylene (ethylene spraying or soaking) or the catalytic combustion of ethylene-producing substances effected in the fields or in closed chambers. The method is characterised in that it can use all hydrocarbons of the group independently of the source they are derived from. This method is practicable for fresh and top-quality fruits.
