STERILIZATION OF STONE OF MORELLO, CHERRY, PLUM, APRICOT, PEACH AND OF NUTSHELL

Freshly stoned drupe stones (of morello cherries; cherries; plums; apricots, peaches) and walnut shells are preserved by placing these to soak in solutions of salt and/or sodium/benzoate and/or salicylate and/or ascorbic acid and/or bleach and/or citric-acid and/or undiluted spirit, preferably rum or wine. This is followed by rinsing and cooking in a 4-6 wt.% bleach solution. Stones and shells are rinsed and dried and optionally processed further.
