A DNA comprises a regulatory sequence and a sequence selected from a DNA sequence having the sequence of SEQ ID NO: 1, 5, 7, 9, 13 or 15 encoding a lachrymatory factor producing enzyme or the regulatory sequence of the DNA. The DNA sequences can be used to transform vegetables to produce vegetables having a lower lachrymatory factor content that non-transformed vegetables. Preferably the vegetable belongs to the genus allium.
