MICROFLORA AND BRINE COMPOSITIONS FOR USE IN THE PRODUCTION OF UNCOOKED STINKY TOFU (CRAW-TOFU) AND METHOD FOR PRODUCINGUNCOOKED STINKY TOFU (CHAW-TOFU)The present invention relates to the microflora designated as A2 and S3 foruse in producing uncooked stinky tofu which is obtained by screening andidentification from conventional stinky brine. The invention further includesthe brine composition for use in producing uncooked stinky tofu suitable forthe growth of the microflora and the method for producing uncooked stinkytofu.
