The process for the preparation of black olives, blackened by alkaline oxidation, packaged and sterilized in the absence of brine, comprising: (a) contacting black olives, blackened by alkaline oxidation with a stream of hot air; (B) adding an edible oil in the inside of the packaging for containing said black olives; (C) packaging black olives from step a) on containers from step b), in the absence of brine; and (d) sterilizing said containers containing said black olives brine. Application in the food industry.
