Procedure for the genetic diagnosis of all species of the genus Merluccius in the food chain. The procedure is characterized by 1) amplifying a 193 bp fragment of the ITS1 spacer of the ribosomal genes, to determine the presence of hake in a sample, 2) by amplifying a 602-659 bp fragment of the ribosomal genes that includes the spacer ITS1 and digest it with a battery of restriction endonucleases and 3) by the analysis of the combined patterns of fragments obtained that allows unequivocally to differentiate the 12 species of hake from each other and from the cod, in all kinds of fresh, frozen and pre-cooked products and by-products . Applicable in the food, importer, health and quality control sectors.
