Functional red pepper paste containing herb extract such as rosemary, lavender, mint, etc., sprouts and herb flowers is provided. The red pepper paste has excellent organoleptic property and anticancer property. To make the titled red pepper paste, 100 parts by weight of red pepper paste is mixed with 0.1 to 10 parts by weight of raw juice and fermented. The herb extract is obtained by freeze drying a herb plant at -70 to -90deg.C under vacuum, extracting at 40 to 50deg.C for 1 to 3hr and aging at 2 to 10deg.C for 1 to 3 days. The raw juice is obtained by adding natural underground water to sprouts and herb flowers, grinding with a grinding mixer and aging at 2 to 20deg.C for 1 to 3 days. The herb plant is any one selected from the group consisting of rosemary, lavender, mint, chamomile, clary sage, oregano, thyme, lemon grass, rose hip, echinacea, jasmine, sweet fennel, mate, ginger, eucalyptus, stevia, jasmine, lilac, orange flower, eyebright, orchid and mauve.
