Quality control method for the dairy industry in which a sample is tested simultaneously for many genes (A) relevant for quality. A prepared sample is treated with many nucleotide probes (I), each specific for a particular (A), and the resulting hybridization products are detected. Independent claims are also included for the following: (1) method for investigating cultures for simultaneous presence of genes (B1) that mediate resistance to phages; (2) method for investigating cultures for presence of desirable genes (B2) that affect milk product properties (flavor; odor; consistency of the end product); (3) microarrays for performing the new methods; and (4) methods for targeted selection of a culture, or set of cultures, for milk processing.
