Production of sausage meat and sausages prepared from it comprises pre-mincing frozen meat (7, 8), adding ice and spice or vegetables to the mince produced (9, 10) and mincing the product again. Independent claims are included for: (A) sausages produced from meat which has been minced at low temperature and then emulsified at -3 to +3[deg]C; and (B) machines for producing the sausage meat comprising mincers (2, 3) for different types of meat which are fitted with temperature sensors (6).
