PROBLEM TO BE SOLVED: To provide a method for producing the subject food, capable of cooking a pasta such as spaghetti or macaroni or noodles such as Japanese wheat noodles, buckwheat noodles or Chinese noodles in an extremely short boiling time, and affording texture similar to the case with boiling dry pasta and raw pasta. ;SOLUTION: This food is obtained through the following process, that is, a dry pasta or dry noodles is moist-heated for a short time to pregelatinize the surface layer alone followed by cooling and drying to remove the moisture on the surface, the resulting pasta or noodles is immersed in water to effect water absorption followed by cooling for a short time; alternatively, a surface- dried pasta or noodles is packed, together with a specified amount of water, in a sealed container such as a plastic bag followed by sealing, and water absorption is completed during storage and/or transport of the resulting food.;COPYRIGHT: (C)1999,JPO
