PROBLEM TO BE SOLVED: To provide a new blue dye having good stability and enabling utilization to foods even under acidic conditions under which a conventional natural blue dye could not be used, and blue collagen or gelatin which is produceable without passing through a deashing step.;SOLUTION: The blue dye is obtained by using one or more kinds of materials selected from scale, skin, surface viscous fluid and fins of fishes having blue back as raw materials and extracting the raw materials with a solution or acidic solution containing an aminocarbonate-based metal chelating agent. The blue collagen or gelatin is obtained by using one or more kinds of materials selected from scale, skin, surface viscous fluid and fins of fishes having blue back as raw materials and extracting the raw materials with an acidic solution.;COPYRIGHT: (C)2007,JPO&INPIT
