PROBLEM TO BE SOLVED: To provide tasty soybean fermented food containing the nutrient of soybean and soybean embryo, having sensually excellent yoghurt-like palate feeling, and excellent in digestibility and absorption; and to provide a method for producing the food.;SOLUTION: The method for producing soybean fermented food comprises allowing lactobacillus to act on a homogenization liquid containing lipoxygenase-vacant skinned soybean and soybean embryo so as to make the liquid ferment, or homogenizing the fermented lactobacillus after fermenting the lactobacillus.;COPYRIGHT: (C)2005,JPO&NCIPI
