An improved low fat instant mix formulation for vada', a black gram based fried snack, has been developed by blending medium coarse semolina obtained after dry milling and sieving of black gram dhal, with steamed fine wheat semolina, skim milk powder, powdered sugar, expanded rice flour, sodium chloride, sodium bicarbonate citric acid and asafoteda. The instant mix is made into a thick batter with required amount of water, followed by shaping and deep fat frying in refined vegetable oil at 175-180° C for 7-8 minutes to obtain golden yellow colored crisp product with lower fat content and improved texture and sensory quality.
