A process for the preparation of food additives from shell-containing raw material by enzyme hydrolysis of proteins with proteolytic enzymes provides for treatment of protein with enzyme preparation of complex action and hydrolysis of protein. Enzyme hydrolysis of protein is carried out with commercial complex preparations as follows: pancreatine, protosubtiline and alkaline protease.
