Coconut water (sometimes misleadingly known as coconut milk) is extracted from coconuts. The fluid is stabilized by thermal treatment at 30-90[deg]C, without addition of chemical stabilizers. It is filtered and transferred into a vessel. Extraction, stabilization, microfiltration and/or vessel filling, take place under an oxygen-reduced or oxygen-free atmosphere, especially under nitrogen. An independent claim is included for the corresponding product. This is stable, packaged and free of chemical stabilizers.
