Disclosed is a method for determining the state of disinfection of an organic substance (2) that is subjected to rotting and/or fermentation in accordance with selected organisms. In said method, the substance (2) is disinfected by means of heat during the rotting and/or fermentation process, and the temperature of the substance is measured at a plurality of points in time at least at one point during the disinfection process. Temperature/time sums are formed from the measured temperatures and the associated intervals, and disinfection shares are assigned to the temperature/time sums. The state of disinfection is then determined from the sum of the disinfection shares.
