Provided is a method for processing high-quality semi-dried mackerel by a loess drying method, wherein the semi-dried mackerel has the highest quality in physicochemical quality and functional quality. The method for processing high-quality semi-dried mackerel by a loess drying method comprises the steps of: washing mackerel; wrapping the washed mackerel with semipermeable membrane cellophane film; putting the loess mixture consisting of dried loess, sand, charcoal, and salt(60:30:5:5) into a drying box, putting cloth and cellophane film on the upside of the loess mixture, and placing the wrapped mackerel on the cellophane film; and putting cloth on the mackerel and spreading the loess mixture thereon.
