A food additive composition containing a mixed herb medicine extract of licorice root, wheat, and jujube is provided to be used as a food additive by confirming an excellent cerebral nerve protecting activity which shows the shortening of escape latency through the water-maze performance in animal models having cerebral nerve damage derived by beta amyloid. A food additive composition containing a mixed herb medicine extract of licorice root, wheat, and jujube is prepared by mixing licorice root, wheat, and jujube in a dried weight ratio of 1~10:5~50:1~10; settling the herb mixture in distilled water as a solvent at 30~100°C for 0.5~10hr, wherein the volume ratio of the herb mixture and the distilled water is 1:1~30; hydrothermal-extracting it; centrifuging, filtering, and concentrating the extract, wherein the 0.01~90wt% of the extract is included in 100wt% of the composition. In addition, other herb medicine is able to be selected from the group consisting of Euphoria longana, Bambusae Caulis in Liquamen, Astragali radix, Zizyphi spinosi Semen, Amomum villosum Lour, radish, ginseng, pine needles, red ginseng, Alpinia oxyphylla miquel, Polygala tenuifolia Willdenow, or iris. The extracting solvent is one or more solvents selected from the group consisting of water comprising refined water, C1-C4 lower alcohol, or propylene glycol, ethyl acetate, butylene glycol, ether, and chloroform.
