PURPOSE: A cooling method and a cooling apparatus are provided to achieve an improved uniformity of cooling performance during a short time period without wetting the high temperature object. CONSTITUTION: A method performs a direct cooling using a water(5) ejected from a nozzle(3), in which a tubular nozzle header(4) having nozzles opened as being faced a plane to be cooled, is rotated centering from a shaft center of the nozzle header. Preferably, the rotation speed of the nozzle head is controlled by an elapse of time in accordance with the position of the plane to be cooled. Further, the diameter of the droplet of the water ejected from the nozzle is controlled in accordance with a change of temperature in the plane to be cooled.
