FIELD: food processing industry, in particular production of food-grade colorants from food waste.;SUBSTANCE: claimed method includes raw material preparation by sequential treatment thereof. Hydrolyzing agent is prepared by culturing of microorganisms Zygofabospora marxiana BKM Y-848, geotrichiatum candidum 3C or mixture thereof in ratio of 1:1. Then prepared agent in introduced in prepared raw materials in amount of 0.01-0.04 % per 1 g of dry raw materials and enzyme hydrolysis is carried out for 1-2 hours. After hydrolysis finishing enzymes are inactivated and obtained solution is filtered. Then rested solvent cake is twice washed and washing waters are blended with filtrate. Obtained solution is boiled down up to half volume to produce target colorant.;EFFECT: environmentally friendly and simplified method for colorant production of increased yield; colorant of improved quality; effective utilization of maize raw material waste.;10 cl, 2 tbl, 1 ex
