The present invention relates to a process for the determination of the endogenous antioxidative potential (eap) in a drinks sample, preferably beer, wine, juice, or mixtures thereof, under application of the esr - spectroscopy. More precisely, the invention relates to a method for measuring a by means of a spin - trap - reagent stabilized secondary radials, preferably a hydroxy ethyl radical, wherein the spin - trap - reagent preferably n - - of the tertiary butyl - α - (4 - pyridyl) nitrone - n - oxide (pobn) is. The present invention also relates to a use of the method for assessing the oxidative stability of a drinks sample, a use of a spin - trap - reagent, preferably pobn to the measurement of the eaps and a kit for carrying out said method. The present invention is characterized in that a method is made available, with which the in the case of processes in the prior art occurring ph - value - effect and the associated influence on the free radical generating in the drinks sample to be measured, is bypassed.
