A composition for inhibiting the sprouting and the disease proliferation in tubers, preferably potatoes, essentially consists in exposing the tubers to the iodine vapors, inside a preservation room, in controlled environment constituted by vacuum or air or nitrogen or inert gas or carbon dioxide or binary or ternary mixtures of such gases, at a temperature ranging from 0 °C to 50 °C, at a relative humidity varying between 80 % and 96 %, and a pressure between 0,01 and 20 atmospheres, in which the iodine concentration per cubic meter is varying between 0,005 and 100 % of saturation, between 0,05 and 82 grams per cubic meter. The exposure times to the iodine vapors are ranging from 1 hour to 9 months, and the exposure can be repeated; the iodine vapors are liberated from solid iodine into the environment of the preservation room, or introduced into the room after their production in a separate room through iodine thermal sublimation, and they spread into the controlled environment whose volume is ranging from 25 % to 95 % of the preservation room volume.
