Method of manufacture of a powder of nougat, characterized by the implementation of the following steps: - is of hard nougat, optionally containing almonds bleached in a grinding chamber, at room temperature; - it is subjected to a pregrinding, nougat, at a temperature which is essentially constant until a mixture having a uniform particle size distribution; - the temperature is allowed to rise of the chamber up to 40 to 50°C. while continuing the grinding so as to obtain a paste of nougat; - it is cooled rapidly the enclosure to a temperature of the order of 2 to 5°C; - the grinding is continued while maintaining a low temperature, to obtain a paste having a particle size of the order of 200 ; and - the paste is transferred nougat, still cold in a mill rolls co-operating with a generator of frigories in which it is subjected to a refining step by controlling its temperature, so as to obtain a powder of nougat.
